Right now I’m out of sync. Have been for almost three hours. I want to reboot the farming daemon without stopping plotting. Are they different services? Can I reboot farming without interrupting plotting?

Depends on how you are plotting, via the windows GUI?
I’m using the Linux GUI
Yes farming and plotting are difference services. If you run ps you will see “start_farmer” process and bunch of “chia” (lowercase) processes which are your plotters.
Yes, you can use chia start farmer-only -r
