Low number of connections?

Same. After days 20+ - 10 nodes, today back to 79, as before and as normal. Somehow, in some way, for unknown reason, factors affected nodes connected and away from the norm last 5 days at least.

This sound like a some sort of conspiracy, doesn’t it. There are over 200k nodes out there looking for peers, so how do they conspire to avoid your node?

The only shared and constant thing is dns-introducer.chia.net Maybe that one is acting up, and not updating peer lists properly (so your nodes are somehow not selected).

If you are really uneasy about those peers, just bump up your target_outbound_peer_count, so your nodes will do a bit more during the peer discovery process. The outbound peer discovery is slower than inbound, so when things will be smooth, that change will not make a difference, but when that introducer will start dozing off, your nodes will slowly grab more outbound peers. Once it will be smooth again, the normal peer recycling mechanism will kick in leaning toward inbound connections.
