Sure shouldn’t be a problem.
From a cost perspective not the most economical way to go unless you plan on making 5000+ plots.
Those drives main advantage is that they have a high endurance, but as we have noticed is that most consumer drives do quite well and can easily make 2000+ plots, see link below.

Also now with the plotting software from madmax, you don’t need so much space on your ssd anymore, 1TB is enough for most cases

Only if you want to use a Ramdisk

Ramdisk (especially in Linux) are fast and RAM has no wear, you can write as much with it as you want so that is the main advantage. With 128GB you use a 110GB Ramdisk that take 75% of the writes, for the other 25% you use ssd.
But madmax also runs fine on ssd only.
