I am seeing many proff found messages in the log file but don’t see any Chia earned. Any idea what is going on?

This is probably just the partials from the pool (you are farming with a pool?)
Pools send many challenges to verify your amount of plots, so that will cause many proofs to be found as they use a much lower difficulty setting.
